Nuts Over Nutella


I love going to my local warehouse store, which in my case is Costco or Sam's, and finding an amazing deal on something I already buy anyway. When perusing the peanut butter aisle one day I came across Nutella in a megasize two-pack, which of course I immediately scooped up. I used to pay premium dollar for a teensy little jar which hardly any local grocer carried. I have been an avid Nutella lover for decades. For those of you not familiar with this amazing little spread - it's hazelnuts and a hint of chocolate. Europe's answer to peanut butter. And no HFCS! I had to wonder afterwards if we really needed that much product for our small four-person household. But how could I resist that amazing deal? So imagine my delight to come across a fabulous little recipe for Nutella mini cupcakes in my favorite food magazine on the planet - Fine Cooking. I used to be very distrustful of quick and easy. My first instinct was to reject a recipe that was too simple and too easy "to be good." Well those days are long gone. With age comes wisdom and enough disasters under my belt to enable me to discern a flop from a hit just by reading the ingredient list. So here's this amazing little recipe - four ingredients, half that in prep time, and one bowl - what's NOT to love??

Nutella Bites

2 12-count mini cupcake pan (or 1 24-count)
mini cupcake liners

1 cup Nutella hazelnut spread
2 eggs
1/2 C. plus 2 Tbsp. all-purpose flour
1 tsp. vanilla
Optional: your favorite add-in (I have used chopped hazelnuts, and mini chocolate chips - both were FAB!)

Mix ingredients. Scoop batter into liners. (I used a small ice cream scoop)
Bake in a 350 degree oven for 10-12 minutes. Eat. (I can never get to the cooling part)

  1. Nutella... yes. Very Belgian. I love the chocolate spread even better though. The nutella is a bit too rich to my liking, and I like dark chocolate better. So the real thing is CHOCOPASTA from KWATTA. The one and only, that is if you are belgian. And FINALLYYYYYY: SHE IS BLOGGING!!!! ;o)))

  2. I love Nutella! And I love EASY recipes. This one sounds delicious AND easy, so I'll have to give it a try. I'll bet some toasted coconut would taste wonderful with these too :)
